Recipe for Vegan Carrot Cake.

 Here is delicious recipe for Vegan Carrot Cake. 




Ingredients:


  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 1/2 cup vegetable oil
  • 1 cup unsweetened applesauce
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 cups shredded carrots
  • 1/2 cup chopped walnuts (optional)
  • Vegan cream cheese frosting (recipe follows)


Directions:


Step 1. Preheat the oven to 350°F. Grease and flour two 9-inch round cake pans.

Step 2. In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, ginger, nutmeg, and salt.

Step 3. In a large bowl, whisk together the oil, applesauce, sugar, and vanilla until smooth.

Step 4. Add the dry ingredients to the wet ingredients and stir until just combined.

Step 5. Fold in the shredded carrots and chopped walnuts (if using).

Step 6. Divide the batter evenly between the prepared pans and bake for 30-35 minutes, or until a toothpick inserted into the center of the cakes comes out clean.

Step 7. Let the cakes cool in the pans for 10 minutes before removing them and letting them cool completely on wire racks.

Once the cakes are cool, frost them with vegan cream cheese frosting.
