Funnel cake is a light slightly sweetened batter fried until golden brown and topped with powdered sugar.
Ingredients:
- 1. 2 cups all-purpose flour
- 2. 2 teaspoons baking powder
- 3. 1/2 teaspoon salt
- 4. 2 tablespoons granulated sugar
- 5. 2 eggs
- 6. 1 1/2 cups milk
- 7. Vegetable oil, for frying
- 8. Powdered sugar, for dusting
Instructions:
- In a large bowl, whisk together the flour, baking powder, salt, and sugar.
- In a separate bowl, beat the eggs and then whisk in the milk.
- Pour the wet ingredients into the dry ingredients and mix until just combined. The batter should be thick and smooth.
- Heat about 2 inches of vegetable oil in a deep saucepan or pot over medium heat until it reaches 375°F.
- Using a funnel or a large measuring cup with a spout, pour about 1/2 cup of batter into the hot oil, moving the funnel in a circular motion to create a spiral of batter. Fry for about 1-2 minutes, until the underside is golden brown.
- Use a slotted spoon or tongs to carefully flip the funnel cake over and fry for an additional 1-2 minutes, until both sides are golden brown and the cake is cooked through.
- Remove the funnel cake from the oil and place it on a plate lined with paper towels to drain any excess oil.
- Dust the funnel cake with powdered sugar and serve warm.
